Marble Brownies

My take on a white chocolate-esque brownie, since vegan white chocolate is surprisingly hard to come by!

450g brownie mix

30g melted margarine

90g boiling water

50g cashews

1 tbsp plant-based milk

2 tsp maple syrup


Soak the cashews in boiling water for 30 minutes

Preheat the oven to 200'C/180'C fan

In a large bowl, combine the brownie mix, margarine and boiling water

Transfer the mix to a lined baking tin so that the mix is 1 inch deep

Drain the cashews and blend with the maple syrup and plant-based milk until smooth

Swirl your cashew cream through the brownie mix

Bake for 20-25 minutes and allow to cool before cutting!
