Coffee and Walnut Brownies

Who doesn't love coffee and walnut cake? Okay, maybe people with a nut allergy. But anyway, and who doesn't like chocolate brownies? Exactly.

450g brownie mix

30g melted margarine

90g espresso (ideally from an espresso machine, but 1 tsp instant coffee mixed with 90g hot water will work just as well)

Handful of chopped walnuts

Handful of whole walnuts


Preheat the oven to 200'C/180'C fan

In a large bowl, combine the brownie mix, margarine, chopped walnuts and espresso

Transfer the mix to a lined baking tin so that the mix is 1 inch deep

Press in your walnuts

Bake for 20-30 minutes (depends on how many blueberries you use!) and allow to cool before cutting.
